A personal field ledger of 93 restaurants across Seoul, Pangyo, and Jeju accumulated over years of living and working between San Francisco and South Korea. From Michelin-starred temples and obsessive sushi counters to underground wine bistros and late-night tech corridor haunts.

When international colleagues and visiting founders ask where to eat in South Korea, they often bring the same predictable checklist: crowded street stalls in Myeongdong, plastic-stool barbecue joints in Hongdae, or whichever tourist list ranks highest on search engines.

That itinerary misses the modern reality of Korean gastronomy.

Over the past decade, South Korea has undergone an extraordinary culinary evolution. Talented Korean chefs who trained at three-star institutions in Tokyo, Paris, New York, and San Francisco returned home. They fused classical French technique and Japanese discipline with Korea’s ancient fermentation heritage, native Hanwoo beef, and coastal seafood. The result is one of the most dynamic, fast-moving, and perfectionist dining landscapes in the world.

Living and working between San Francisco and Seoul, dining across South Korea has been my favorite intellectual pursuit and personal refuge. Over the past several years, I logged every memorable restaurant I visited into my private Catchtable collection: business dinners in Pangyo, milestone celebrations in Cheongdam, late-night counter meals in Sinsa, and solitary retreats in Jeju.

Mosu Seoul 모수 서울 · Gyeongnidan-gil #

Two-Michelin-Star Contemporary Gastronomy · Chef Sung Anh
Sung Anh’s cooking remains singular. After operating as South Korea’s sole three-star institution in Hannam-dong, Mosu relocated to a striking space in Yongsan, reopening in March 2025 and earning two stars in the 2026 guide. Mosu is neither classical French nor traditional Korean. It is a mathematically precise study of texture and aroma, anchored by signature dishes like toasted acorn noodles, crisp burdock bark, and pristine coastal seafood. For diners who watched Anh judge Netflix’s Culinary Class Wars, the live counter displays even greater discipline and restraint.

One-Michelin-Star Contemporary Gastronomy · Chef Eum Tae-chul
Named after pine trees and moonlit nights, Solbam offers an immaculate progression of seasonal Korean flavors. Guests choose their own handcrafted wooden dining knives before the savory courses arrive. Chef Eum’s dishes emphasize clean finishes, herbal harmony, and quiet hospitality.
